It’s the 21st century, and a whole generation has grown up eating a new type of food unknown to their parents and grandparents – vegetable oils, high in a kind of oil called Omega 6. Before the 1960’s you could not even buy them in Ireland – then they were suddenly everywhere, for frying, baking, salad dressing, chips, and fish. No longer was fish fried in lard, no longer were cakes made with suet. Animal fats (containing little omega 6) were out and vegetable oils were in. |
